Today I am sharing a recipe we have really been enjoying!

These are so easy to make and are really tasty!

They are great fresh from the oven, as leftovers, and freeze nicely as well.

I have made these several times now and highly recommend them.

I am only using the potatoes, cheese, and eggs, but the recipe is very versatile, and you can add other ingredients as well (see recipe link for more ideas.)
