My family has been asking me to make some meatballs.

The kids tried them at summer camp and have been wanting me to make some at home.

It was actually a little tricky to find a recipe to try as I wanted them to be gluten-free/dairy-free and use ingredients I already had on hand.

I did make a couple of substitutions to this.

I used almond flour instead of crackers, I skipped the parmesan cheese, and I actually forgot the egg!

I made these in the oven and served them over rice and smothered with BBQ sauce.

I was a little nervous with all my changes, but they turned out great! You couldn’t taste the almond flour, and they stayed together and were moist-even without the egg.

They had a bit of a kick to them (not sure if it was the seasonings or the sauce), but they were pretty darn good!

I made 25 meatballs with this recipe and made them ahead of time and froze them.

It was really nice to be able to just pull these out of the freezer the night before and have them ready to go into the oven for dinner.

I will make these again-although I will try to remember an egg next time! I am not sure it will make a difference, but I will see if it does.

I think these would be good as an appetizer (I want to try them in the crockpot smothered in sauce), and also even with homemade fries instead of rice. Lots of possibilities, and definitely something I will add to my menu in the future!
