So, evidently I have been cooking chicken all the wrong way.  I have always grilled chicken, and then cut it up and used it in recipes until I found this on Pinterest:

Now, you may be saying “duh!” but I guess the concept never occurred to me!  This is SO much easier, and wastes less chicken to boot as the fat just melts off.  It is way juicier too.  I have made this a few times now, and won’t go back-that’s for sure.  Thanks Pinterest-you have once again made my life better!  🙂
